Curry udon 😍 If you haven't tried it, it's an awesome dinner - and you can do this from some leftover curry! A perfect winter warmer and ultimate comfort food. You can fry some extra beef slices and onion to top the curry or if you're feeling generous, make a katsu. If you don't have time, get a ready made katsu and heat it up whilst you get the curry broth made up.

All you need:
Leftover Japanese curry
Udon noodles
Additional water
Dashi stock

1. Start by heating your leftover Japanese curry in a saucepan over medium-low heat. The curry has probably thickened in the fridge, but don't worry, just 2 cups of water to reach your desired consistency. Add 1tsp dashi stock. Stir well and it you should have a thick soupy curry broth.
2. While the curry is heating, prepare your udon noodles according to the package instructions. Usually, udon noodles only need a few minutes to cook in boiling water. Drain and set them aside.
3. Optional - fry some onions and beef to add to your curry udon! Or prep your katsu 😁
4. Once the curry is heated through and has a nice consistency, it's time to add the udon noodles. Mix them into the curry until they're well coated.
5. If you like a slightly thinner broth, you can add more water at this point and adjust the seasoning if needed.

500g choice of protein (chicken, beef, or tofu)
2 large potatoes
2 carrots
1 onion
2 cups of water
2 cups of your favorite Japanese curry roux
2 tbsp of vegetable oil
Cooked rice for serving

Instructions:
Heat the vegetable oil in a large pot and sauté the chopped onions until fragrant.
Add your protein of choice and cook until it's no longer pink.
Add the chopped potatoes and carrots and stir-fry for a few minutes.
Pour in the water and bring it to a boil.
Simmer until the potatoes and carrots are tender.
Add the Japanese curry roux and stir until it's fully dissolved and the curry thickens.
Simmer for a few more minutes, stirring occasionally.
Serve the Japanese curry over a bowl of steaming hot rice, and you'll have a comforting meal ready in no time. The rich and slightly sweet flavour of Japanese curry is sure to satisfy your taste buds.
